A delicious way to prepare leftover rib meat.

Eat Hearty with these Leftover Pork Rib Tacos

What’s more delicious than smoked ribs?  I’m not sure, but leftover pork rib tacos are equally as delicious!   Of course, you can use slow cooked, pressure cooked, or any kind of cooked ribs, but I happened to have some leftover smoked ribs that were begging to be eaten. 

This meal is quick to prepare and let me clean out a lot of leftover ingredients I had laying around: tortillas, vegetables, and meat.   Including the time to cut vegetables, it only took about 15 minutes to prepare.

An easy meal with lots of veggies

While using up my smoked ribs, I was able to add some leftover white onion and sweet peppers I bought last week.   With a bit of lettuce, I was able to create a colorful, crunchy, healthy layer to these tacos.    I also had some leftover refried beans that paired nicely with a side of rice.

Tips and Tricks

  • Sour Cream: Similar to our tostada recipe, you can use a baggie to pipe sour cream onto your tacos.  Spoon sour cream into a baggie, seal it, and cut a corner off the baggie. 
  • Green enchilada sauce: For this recipe I used both regular red salsa, but also green enchilada sauce.  
  • Warmed tortillas:  My corn tortillas are also refrigerated leftovers!  I warmed them up in a pan on medium heat for no more than a minute to limber them up and create a nice texture. 
  • Reheating the meat:  I’d recommend one of two options.  You can either quickly pan fry the meat with a bit of water in the pan.  The meat will take on a nice crispy texture.   Or for an even faster meal, just microwave the meat for 2-3 minutes.  The fatty meat will hold its moisture well.
  • Use other types of meat:  You don’t have to use pork rib meat.  I’ve also had great success using shredded smoked chicken.

Let’s make some Leftover Pork Rib Tacos

First, let’s start by prepping our vegetables.  Dice some onion and sweet or bell peppers and set aside.  Rinse and dice some lettuce as well.

Heat a pan to medium heat and lay out your tortillas.  Let them cook for about a minute, then flip and cook for another 30 seconds.  Remove to a plate.

Warm up your leftover pork rib meat.   I microwaved mine for 3 minutes, but the exact time will depend on how much meat you have to work with.  If you’re unsure, check on the meat in 1 minute increments.   Once the meat is hot enough, portion it among your tortillas.

Now add your lettuce, onion, and peppers.  Drizzle some sour cream, salsa, and green enchilada sauce over top.  Serve with rice and refried beans.  Enjoy 🙂

Ingredients
  

  • 4 6" Corn Tortillas
  • 8 oz leftover rib meat You can use more or less as needed
  • 1 cup diced lettuce
  • ¼ cup diced onion
  • ½ cup diced peppers Sweet or Bell
  • 2 tbsp sour cream
  • 2 tbsp salsa
  • 2 tbsp green enchilada sauce (optional)
