Combine all meatball ingredients in a medium sized mixing bowl and use your hands or a wooden spoon to mix thoroughly.
Shape the mixture into small, round meatballs.
Heat 1 tbsp of oil in a skillet. Fry the meatballs in batches until they are well browned on all sides. Remove finished meatballs to a lightly greased baking sheet.
Once all of the meatballs are browned, put them into the oven and bake for 20-30 minutes. This will finish cooking the meatballs and keep them warm until the gravy is ready.
To the same skillet, add the butter and melt. Then whisk (or stir vigorously if using a teflon pan) in the all purpose flour and cook for 2 minutes, stirring continuously. The flour mixture should darken slightly.
Add the chicken broth slowly, stirring or whisking continuously until well combined. Stir in the heavy cream, soy sauce, and dijon mustard. Stir well to combine.
Bring to a simmer and cook until the sauce has thickened.
Serve the meatballs covered in gravy with potatoes, noodles, and lingonberry jelly.
