Chicken in Brandy Cream Sauce: A Symphony of Flavors
In the realm of culinary delights, few dishes can match the richness and sophistication of Chicken in Brandy Cream Sauce. This decadent dish combines tender chicken with a luxurious cream sauce infused with the warm, complex flavors of brandy. Whether you’re planning a special dinner party or simply craving a gourmet meal, this recipe is sure to impress even the most discerning palate.
At the heart of this dish lies the marriage of succulent chicken and a velvety cream sauce flavored by brandy. The chicken is pounded thin for faster cooking, then sautéed to golden perfection, locking in its juices and ensuring a tender texture. Meanwhile, the brandy lends a depth of flavor, with its distinct notes of fruit and oak adding a sophisticated touch to the dish.

Substitutions to Make it Your Own
Despite having relatively few ingredients, there are many ways that you can make it your own. Or maybe you’re missing an ingredient or two and need a substitution? Read my suggestions below.
- A good brandy will really pop: The better your brandy, the better your sauce will be. While any brandy will make a good sauce, it only gets better the more you spend.
- Don’t have brandy? No problem: You can substitute chicken broth for the brandy in this recipe. While the flavor will be different, it will be just as creamy and tasty.
- Forgot to buy green onions? You can make this recipe with regular onions instead, just make sure you dice them finely.
- Looking for an even deeper flavor: Try frying a little garlic, one clove or 1 tbsp minced, when you fry the onions and mushrooms. Let it come to a nice gold color before adding in the brandy.

The Perfect Pairing
Chicken in Brandy Cream Sauce pairs beautifully with a variety of side dishes, allowing you to customize your meal to suit your tastes. I have always preferred this dish served over a wide pasta like fettuccine, but consider serving it with creamy mashed potatoes or buttery rice pilaf for an equally delicious meal. Try these options:
- For a pop of color and freshness, add my Spanish Vegetable Side Dish to the plate.
- Or add one of my Cottage Cheese Drop Biscuits to soak up every last drop of the delectable sauce.
- Try this with my Turmeric Yellow Basmati Rice too as a fun side.
A Touch of Elegance
One of the most enticing aspects of Chicken in Brandy Cream Sauce is its undeniable elegance. Whether plated and garnished with fresh herbs for a formal dinner party or served family-style for a cozy night in, this dish exudes sophistication and refinement. Its creamy sauce and tender chicken elevate even the simplest of meals into a gourmet experience. Who doesn’t love a delicious cream sauce?
Making this dish even heartier are the mushrooms. They add volume, but more importantly they soak up all of the flavor the chicken imparted in the pan. Watch as the raw mushrooms change color, which means they’re soaking up all of that chicken flavor.

Conclusion
Chicken in Brandy Cream Sauce is a dish that embodies the essence of gourmet dining. Its rich flavors and elegant presentation make it perfect for any occasion, whether you’re hosting a dinner party or simply craving a special meal at home. I especially recommend this for a romantic date night at home. Once the chicken is cooked, the sauce comes together very quickly, and before you know it, you’re ready to eat! With just a few simple ingredients and a bit of culinary finesse, you can create a restaurant-quality dish that will delight your taste buds and impress your guests. So why not elevate your next meal with this indulgent and irresistible recipe?

Chicken in Brandy Cream Sauce
Ingredients
- 1 tbsp Canola oil
- 1.5 – 2 lbs Boneless skinless chicken breast
- 8 oz Fresh mushrooms sliced
- 4 Medium green onions chopped
- ¼ cup Brandy
- ½ cup Heavy whipping cream
- 2 tsp Worcestershire sauce
- Salt and pepper to taste
Instructions
- Pound your chicken breasts with a meat mallet to about ½ – 1 inch thick and slice into 4 even pieces. Coat evenly with salt and pepper.
- Heat the oil in a skillet over medium-high heat. Add the chicken and cook for about 10 minutes, flipping after 5, until each side is nicely browned and cooked to 165F. Remove to a plate and set aside.

- Add mushrooms and onions to the skillet. Stir to scrape up any bits of chicken stuck to the pan and fry until they have softened, 2-3 minutes.
- Add the brandy and stir well to combine. Let this cook down for 2-3 minutes, or until the liquid level has reduced.
- Reduce the head to medium and add the heavy whipping cream and worcestershire sauce. Return the chicken and any accumulated juices to the pan as well. Stir well to combine then cook for 2-4 minutes until heated through.
- Serve over fresh cooked pasta or rice and enjoy.
