Recipe for Blueberry Bran Muffins with Yogurt

Blueberry Bran Muffins with Yogurt
Ingredients
- 1 cup Bran cereal
- 1 Egg, large
- ¼ cup Light Country Crock
- 1.5 cups Greek yogurt
- 1.5 cups All purpose flour
- ⅓ cup Brown sugar
- 1.25 tsp Baking soda
- ½ tsp Salt
- ½ cup Blueberries
Instructions
- Preheat the oven to 400F and grease the muffin pan with non-stick spray or place 12 paper liners in the muffin pan.
- Place the cereal in a zip top bag, seal the bag, and use a rolling pin or meat mallet to crush the cereal. This process can be done on a cutting board also if you don’t have a zip top bag.
- In a medium bowl or the bowl of a stand mixer, combine the egg, country crock, and yogurt. Stir by hand or use the paddle attachment for your stand mixer until well combined.
- Add cereal, flour, brown sugar, baking soda, and salt to the bowl. Stir or use the paddle attachment again to combine the ingredients until moist and well combined.
- Add the blueberries to the bowl and gently stir into the dough. If you’re using a stand mixer, do this part by hand.
- Spoon the batter into the muffin pan, making 12 muffins. Each muffin cup should be ¾ of a little more full.
- Bake for 18-20 minutes, or until a toothpick inserted into the middle of a muffin comes out clean and the tops are golden brown.
The Power of Bran
Bran cereal is the unsung hero of this recipe. It adds fiber, which is excellent for digestion and overall gut health. The crushed cereal flakes add a great texture and volume to the muffins. Additionally, the combination of wheat bran and yogurt ensures these muffins are both nutrient-dense and satisfying.
Creamy Yogurt Magic
Greek yogurt is the secret ingredient that keeps these muffins moist and tender. The yogurt makes up most of the liquid component for these muffins, also adding a touch of protein to each muffin. It also adds a subtle tanginess that pairs beautifully with the sweet blueberries. If you don’t have Greek yogurt, you can use any kind of yogurt you have on hand.
Bursting Blueberries
While the bran cereal and yogurt are the health powerhouses in this recipe, the blueberries are the star of the show. They provide a juicy, antioxidant-rich pop in every bite. You can also use fresh or frozen blueberries, either will be delicious. In my recipe, I used ½ cup of blueberries, but you could use up to ¾ cup for more blueberry packed muffins.
Don’t have blueberries? No problem. Just about any berry will do. Aside from blueberries, I have also used raspberries and blackberries. One recommendation: If using blackberries, make sure they’re not too big. The blackberries from my garden get pretty big, so I usually cut them down to about the size of a raspberry. Usually that just means cutting the particularly large ones in half.
Versatile Snacking
Blueberry Bran Muffins with Yogurt are fantastic for a light breakfast or a snack. Full of good, healthy ingredients, so you can have one for a snack with no guilt. These also freeze well, so I like to make a double, or sometimes triple batch and then store them until I need them. If freezing, you can defrost them by moving the muffins to the refrigerator for a day. If you want your frozen muffins sooner, wrap in a moist paper towel and microwave for 30 seconds to a minute and enjoy.
In summary, Blueberry Bran Muffins with Yogurt are a guilt-free pleasure. They’re perfect for busy mornings, lazy weekends, or anytime you crave a wholesome treat. So preheat the oven, grab your mixing bowl, and let the aroma of blueberries and bran fill your kitchen!
