Ingredients
  

  • 1 cup Bran cereal
  • 1 Egg, large
  • ¼ cup Light Country Crock
  • 1.5 cups Greek yogurt
  • 1.5 cups All purpose flour
  • cup Brown sugar
  • 1.25 tsp Baking soda
  • ½ tsp Salt
  • ½ cup Blueberries

Instructions
 

  • Preheat the oven to 400F and grease the muffin pan with non-stick spray or place 12 paper liners in the muffin pan.
  • Place the cereal in a zip top bag, seal the bag, and use a rolling pin or meat mallet to crush the cereal. This process can be done on a cutting board also if you don’t have a zip top bag.
  • In a medium bowl or the bowl of a stand mixer, combine the egg, country crock, and yogurt. Stir by hand or use the paddle attachment for your stand mixer until well combined.
  • Add cereal, flour, brown sugar, baking soda, and salt to the bowl. Stir or use the paddle attachment again to combine the ingredients until moist and well combined.
  • Add the blueberries to the bowl and gently stir into the dough. If you’re using a stand mixer, do this part by hand.
  • Spoon the batter into the muffin pan, making 12 muffins. Each muffin cup should be ¾ of a little more full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the middle of a muffin comes out clean and the tops are golden brown.

One recommendation: If using blackberries, make sure they’re not too big. The blackberries from my garden get pretty big, so I usually cut them down to about the size of a raspberry. Usually that just means cutting the particularly large ones in half.

These also freeze well, so I like to make a double, or sometimes triple batch and then store them until I need them. If you want your frozen muffins sooner, wrap in a moist paper towel and microwave for 30 seconds to a minute and enjoy.
