Chicken Wing Rub Recipe for Smoking

Smoking chicken wings is a flavorful and rewarding process. Here’s a simple guide to achieve those crispy, smoky wings.

Equipment

  • 1 Smoker I use a Pit Boss Pellet Smoker

Ingredients
  

Brown Sugar and Paprika Rub (8 wing)

  • 1 Tbsp Brown sugar packed
  • 1/2 Tbsp Baking powder
  • 1 Tbsp Smoked Paprika
  • 1 Tsp Paprika
  • 1/4 Tsp cayenne pepper
  • 1/2 Tsp Garlic Powder
  • 1/2 Tsp Black Onion Powder
  • 1/2 Tsp Kosher Salt
  • 1/2 Tsp Black Pepper
  • 1 Tsp Dried Oregano

Lemon Pepper Rub (8 wings)

  • 1.5 Tbsp Lemon Pepper Seasoning
  • 1/2 Tsp Kosher Salt

Instructions
 

Preparation

  • Make the rub: In separate bowls, combine the spices for each rub recipe. Stir together until well combined.
  • Dry your chicken wings: Use paper towels to thoroughly dry the wings on all sides. Moisture-free skin is essential for crispy results.
  • Season the chicken: Evenly coat the chicken wings in the rub.

Smoking Process

  • Heat your smoker or grill: Set the temperature to 250°F.
  • Add a smoke tube: If pellet grilling, add a smoke tube for extra smokiness.
  • Put your chicken on the grate: Place the wings directly on the grill grates for maximum exposure
  • Smoke time: Smoke the wings for 2 to 2.5 hours, just until the internal temperature is reached.
  • Internal temperature: The chicken should reach an internal temperature of 160°F during smoking.

Crisping up the Wings

  • To crisp the skin, broil on high for about 1.5 minutes.

Serve and Enjoy

  • Toss the smoked wings in your favorite sauce or serve them as they are.
  • Whether you like them saucy or au naturel, these crispy smoked chicken wings are sure to be a hit!
